 Hi, Everyone!  ” Happy “What I Ate Wednesday!”  These are my meals from last Wednesday. This day we attended the last outdoor concert of the summer season in our town. We have attended most of them and we enjoy being outside and picnicking. Tanner, our dog, loves the concert more than we do and I am sad the season is over for him. 🙁  Hope you enjoy my day. Thank you to Jenn at Peas and Crayons for hosting the WIAW!

This month’s theme is summer staples and this day does feature some my summer staples. Blueberries, salads (all kinds), water  and summer concerts are some of my summer staples.

This is what I ate:

Breakfast (6:30am)

I started the day with a coffee and two poached eggs with some melted cheese, green salsa and fresh ground pepper.

Am Snack (10:00am)

Ricotta cheese, blueberries, slivered almonds and a sprinkle of cinnamon. Yummy 🙂

Lunch (11:30am)

Salad with brisket (leftover from the night before), butter lettuce, spinach, red bell pepper, tomato (home-grown), feta cheese and Italian dressing.

Dinner (5:30 pm)

I didn’t have time to pack a picnic, so we picked up dinner from Healthy Junk. I had a vegan Philly Cheese Steak with sparkling water.

Pictures from my cooking class

My good friend Soo invited me to attend a cooking class with her and it was so much fun that I feel like I have to share my experience with you.  Going to a cooking class was much more fun than anything I’ve done in a long time.  I had a blast.  I’ve been thinking of some of the reasons I had such a good time.   Here they are:

  • It motivated all of us to try something new.  The seasoned cooks were in love with the new recipes and techniques learned and the beginning cooks were inspired to learn more!
  • It was a great chance to socialize.  I met so many nice people and had a chance to bond while creating our wonderful meal.  We even noticed that one of the guys at our table got a phone number out of it!
  • It was a great way to experience healthy food that tastes good too.  If you pick the right class, you can walk out of it feeling like you are not only prepared to try out some new recipes for your friends of families, but can also be assured that they are healthy also!
  • It was fun to sample the fruits of our labor.  After the completion of the hands on portion of the class, we were all able to sample our creations…such fun!

If you have been following us for a while, I am sure you know we are big fans of keeping hydrated (post Staying Hydrated) and journaling food intake (post Writing For Weight Loss). Recently, I found an app that combines these two goals called Water Logged. This is a free app for iPhones, iPad and iPod Touch that keeps track of your water intake goal for the day.

What I like about this app:

  • It is quick and very simple to record water intake.
  • You can set reminders.
  • It simulated a glass filling with water as you add water consumed.
  • Goals can be changed easily and often.
  • Quantities can be reported on oz, mL or L.
  • Mistakes can easily be deleted.
  • You can take pictures of your glasses and keep them on record.
  • It keeps you motivated through the day.
  • Once you have reached your goal for the day, you are congratulated 🙂

This is a recipe that my mom used to make us when she was strapped for time. It is both quick, low fat, and super easy! She said she got from the back of a Las Palmas can years ago when my sister and I were kids.

INGREDIENTS:

3 cups cubed cooked chicken

1 28 oz. can Las Palmas Green Chile Enchilada sauce

1 15 oz. can black beans, drained and rinsed

1 ¼ cups frozen corn (I like the roasted corn from Trader Joe’s)

1 cup chopped onion

2 garlic cloves, minced

Combine all ingredients in a dutch oven or a large saucepan, bring to a boil.  Reduce heat, and simmer, uncovered 30-40 minutes.

Makes 10 one cup servings.   I think this can be served with rice or tortillas.

Hi, Everyone!  The best day of the week is here again. Happy “What I Ate Wednesday”!  These are my meals from last Sunday. It was a very hot day at about 100 degrees. We spent the day in the Redlands area for a family birthday celebration. Hope you enjoy my day. Thank you to Jenn at Peas and Crayons for hosting the WIAW!

This month’s theme is summer staples and this day again does not feature any of my summer staples. My staples are smoothies for any meal, fresh summer fruits and water, water, water.

This is what I ate:

Breakfast (7:30am)

I started the day with a large breakfast at a random diner. I had coffee with milk and stevia (I bring my own) with eggs, sausage and hash browns.

Am Snack (10:00am)

Starbucks iced Caffe Americano with stevia and a splash of ½ & ½.

Lunch (11:45am)

We picked up sandwiches from the Olive Avenue Market. Whenever we are in Redlands we like to stop by here. This trip I had a sandwich called “The Sunset” which was a very good chicken salad.

Dinner (5:30 pm)

We had dinner at a pub restaurant called The Tartan. Their menu was heavy on steak and burgers, with the high temperature that all seemed too heavy for me. So my husband and I ordered several appetizers to share. We started with split pea soup and then potato skins (I don’t think I have had this dish for over a decade) and a shrimp cocktail. Leaving the restaurant we were lucky to see a beautiful rainbow.

Dessert (8:00pm)

Back at my family’s house with had black and white cupcakes for birthday cake. It was good! 🙂

Recently, jenmijenmi received a package from Sun Chlorella USA containing Infuse Your Mood Tea. Jennifer and I were both excited to have the opportunity to review our first product.

We decide to sample the tea at Jennifer’s work, so we could have many unbiased opinions. We had about a dozen tasters, who sampled the tea and filled out a survey for us. We asked about taste and the relaxing qualities of the tea. We asked them to rate on a scale of 1 to 5, 5 being the most desirable.

The tea was prepared according to the instructions on the box and was served plain without sweetener, lemon or milk. Infuse Your Mood Tea received an average rating of 4 out of 5. Most of the comments on flavor said the tea was smooth, bright and earthy and I agree with that description.

Secondly, we asked about the relaxing qualities of the tea. This tea received an average of 3.7; considering our testers were working I think that is a high score. Since this tea is caffeine-free I could see it was a relaxing drink after dinner.

This very unique vegan cookbook was written by a vegan punk rocker who spent years “…surviving on potato chips….”   The author not only includes recipes in his book, but also chronicles his punk lifestyle…gigs, influences, touring, etc…pretty interesting stuff!  I bought this book at Hot Topic more than 5 years ago.  It must be out of print now, because I saw that it is selling for over $70 on amazon.com and it’s not even a hard cover book!  The used version is also available for MUCH LESS!

My thoughts on the book…?  Some of the recipes are a little too simple and might be a little boring for some.  However, some of the recipes are actually very good and tasty, and really speak to the home cook.  There’s a recipe I like entitled Mixed Veg noodles that lists one of the ingredients as 2 handfuls of mushrooms (shiitakes, or whatever you can afford).  This is a good cookbook for “everyday” food and also for starving students or those watching their budgets.  Overall, I think it’s a great book to have on your cookbook shelf.

Paninoteca Maggio, an Italian sandwich shop, in Santa Ana that has quickly become one of my favorite lunch spots. This small café is located in the City Place Shopping Center and is close to Mother’s Market. Inside this café it is rustic and modern and I am instantly transported back to Italy.

Orders are taken at the counter by the extremely friendly staff. When your order is ready it is delivered to your table. There are a couple tables inside and several tables outside, most with umbrellas.

The menu features sandwiches, a few salads and coffee. I cannot come here without ordering a café latte. They use Italian Segafredo Expresso with whole milk. It is a treat that I love.

The sandwiches are really the stars here.  I think I have tried about half of them and they are all wonderful. My all time favorite sandwich is the Amalfi that has prosciutto, mozzarella, tomatoes, arugula, basil pesto and balsamic glaze. It is pure perfection. And my next favorite is the Lucca, which is a vegetarian sandwich. The Lucca has roasted eggplant, zucchini, red bell peppers, provolone, arugula, artichoke pesto and lemon aioli.

I have also enjoyed the Milano, a roasted chicken breast sandwich with asiago cheese, arugula, sundried tomato pesto and lemon aioli. In addition, the Roma is another sandwich worth trying. The Roma has pork and veal meatballs with parmesan cheese, fresh basil and marinara sauce.  I think the most popular sandwich is the Toscana that features porchetta, arugula and lemon aioli and I understand its popularity.

The salads change weekly and they are always good. If you are looking for something sweet try the Dolce. It is a nutella and peanut butter panini that is creamy and gooey in the best way.

If you find yourself on the I-5 freeway in Santa Ana, close to Main Street, around lunchtime take a detour to Paninoteca Maggio. You will be in for a treat.
