Honey Ginger Lemon Tea

Having had a cold for almost two weeks now, I have been looking for something different than just plain tea or water. This drink is an Arnold Palmer highbred. It has been so soothing on my throat and actually has enough flavors that I can taste it. This is my new favorite drink and would be good year round and not just when you are sick.

 Ingredients:

  • 10 cups of water (5 cups boiled)
  • 1 inch of ginger (peeled and sliced)
  • ¼ cup honey
  • 3 decaf tea bags (I have used Trader Joe’s Bedtime Tea)
  • 10oz can of frozen concentrate lemonade (I used Cascadian Farm)

Instructions:

  1. Boiled 5 cups of water with ginger in a large pot.
  2. Remove from the heat and stir in the honey.
  3. Drop in tea bags and let steep for 2-3 minutes.
  4. Remove tea bags and stir in frozen concentrate lemonade.
  5. Once lemonade has dissolved, add the last 5 cups of cold water and combine.
  6. Transfer to a pitcher and should be stored in the refrigerator.
  7. Can be served hot or cold.
  8. Enjoy!

  • I use Cascadian Farm frozen concentrate lemonade because it is sweetened with organic white grape juice. Most juice concentrates are sweetened with high fructose corn syrup, which we try to avoid.
  • I used decaf tea, so I could drink it day or night. But any tea of your liking could be used.

Hello Everyone. Happy What I Ate Wednesday!  I am sharing my meals from Saturday. I still have a cold for the second week and now my husband does too. So that means lots of comfort food. Thank you to Jenn at Peas and Crayons for hosting the WIAW.

This is what I ate:

Breakfast (7:00am)

I started the day with coffee from Starbucks in my new reusable cup and toasted pumpkin bread.

My Chicken Soup

This is the soup I made for Jennifer when she was sick.  🙂

Ingredients

3 quarts water

1/4 cup Better than Bouillon chicken soup base

1/2 of a Rotisserie chicken, cooked and shredded, but leave the drumstick intact

2 tsp. grated ginger

1 TB fresh rosemary, removed from stem and washed

1 cup cilantro (remove the large part of the stem with no leaves), chop loosely after measuring

1/2 orange bell pepper, sliced

1/2 green bell pepper, sliced

1/2 red bell pepper, sliced

3/4 cup carrots, cut into coin sized pieces

8 baby red rose potatoes, washed and quartered

1/4 tsp freshly ground pepper

 

Pour water into a soup pot and add the soup base, ginger, rosemary, shredded chicken, and drumstick.  Simmer, uncovered for 30-45 minutes or until it looks like the chicken is ready to fall off of the drumstick.

Remove the meat from the drumstick and add it back to the soup.  Discard the bone.

Add the rest of the vegetables and ground pepper and simmer for another 30 minutes, or until the vegetables are done.

I have seen lots of pictures on Pinterset of the Hasselback potatoes and finally I decided to try them for myself. I am so glad I tried these potatoes they are so tasty, soft inside and crispy on the outside. I will be making theses often.

Inspired by Foodie Wife

Ingredients:

  • 2 medium Yukon Gold potatoes
  • 1 TBSP olive oil
  • 1 TBSP unsalted butter
  • 1 garlic clove, thinly sliced
  • ½ tsp dried thyme
  • salt and pepper, to taste (I used Herbamare)

Instructions:

  1. Preheat oven to 400 degrees.
  2. Line baking sheet with foil or  parchment paper.
  3. Place a potato in a bowl of a large wooden spoon; the spoon will act as a guide when slicing the potato. Cut across at about 1/8 intervals, without cutting through the potato.
  4. In a small saucepan, melt the butter and whisk in the olive oil.
  5. Lightly brush prepared baking sheet with butter/olive oil.
  6. Drizzle the remaining butter/ olive oil.
  7. Season with rosemary, salt and pepper.
  8. Bake for 1 hour and 10 to 20 minutes.
  9. The flesh should be tender and the outside should be crispy.
  10. 10. Remove from the oven and serve.
  11. 11. Enjoy!

  • I have also seen versions of these potatoes with cheese that will be my next attempt.
  • These can also be made with Russet, New Potatoes or just regular baking potatoes.

Have you ever made a whole chicken, or even bought a rotisserie chicken at the grocery store, without thinking of what you could possibly pair it with?  I know I do.  Those that know me well know that I usually “wing it” when it comes to meal preparation.  Above is half of a shredded chicken in a pan getting ready to simmer (added a cup of water, 1/2 cup cilantro,and 1 tsp. of chicken soup base and simmered for about 20 minutes, uncovered).  I have made use of this starter chicken in various ways.

Here are some ideas for using your leftover chicken:

  • add it to a green salad
  • use it for chicken soft tacos
  • make some chicken enchiladas
  • I like to use the above chicken in a chicken torta
  • add it to a pasta or noodle dish (I add it to asian noodle dishes quite often)
  • make some chicken soup (recipe to follow)
  • many other uses…..

Does anyone else have any unique ideas?

I found this recipe at my mom’s house at Thanksgiving. We love this simple recipe so much, I make almost once a week. It is a great way to get more vegetables in your diet.

Adapted from Melissa McCarthy’s recipe

Ingredients:

  • 2 bags of frozen broccoli
  • 1 bag frozen soycotash (Trader Joe’s edemame succotash)
  • 2 quarts chicken broth
  • few sprinkles garlic powder
  • salt and pepper to taste

Instructions:

  1.  In large stockpot , over medium high heat, add broccoli, soycotash and chicken broth.
  2.  Season with garlic powder, salt and pepper.
  3. Bring to a boil, then reduce heat and simmer for about 15 minutes with pot partially covered.
  4. Puree with an immersion blender until slightly chunky.
  5.  Serve and enjoy.

* Regular frozen succotash or frozen green beans will also work, instead of the soycotash.

Hello Everyone. Happy What I Ate Wednesday!  I am sharing my meals from Monday. I have a cold, so I am eating comfort food.  Thank you to Jenn at Peas and Crayons for hosting the WIAW.

This is what I ate:

Breakfast (6:30am)

I started the day with coffee and Noosa strawberry yogurt, Uncle Sam cereal and slivered almonds.

A couple of kiwis, since they have more vitamin C than oranges. 🙂

I was very set on not committing to any resolutions this year.  I never do.  However, a friend of mine came over for a visit and gave me a very convincing speech.  Basically, we all have room for improvement.  Despite it being the first of the year or half way through, we should always be looking for ways to improve.  How could I argue with that?  Last year, although I did not call it a New Year’s resolution, I did try to vary my exercise routine a bit.  It has been so fun joining Jennifer and friends on the trail on Sundays since we also get to take our dogs!  Above is a picture of my friends Christina, Carol, and I after a very muddy 5K run.

As for this year, my resolution is to get more sleep. I always tell people that I just can’t get myself organized enough to get to bed early.  The truth is, I just don’t make it a priority.  So, let’s see how I do!  🙂

What are your New Year’s resolutions?  Would anyone else like to commit to something?

I have been feeling a little under the weather lately and two remedies have helped me feel better. I have been drinking plenty of my Ginger Asian Pear Tea (recipe) and Homemade Shower Bombs made with Essential Oils.

Essential oils gently help with nasal congestion. So many different oils are helpful for a cold. I used lavender and eucalyptus because that is what I had on hand and it smelled great. Other opinions would be sandalwood, cedar wood, peppermint, rosemary, thyme, frankincense, hyssop, tea tree, lemon and pine. With so many choices, you can make up your own custom scent.

Ingredients (for 6 shower bombs):

  • 1 cup baking soda
  • 1/3 cup water
  • essential oils of your choice
  • foil cupcake liners (paper sticks)
  • spray olive oil

Instructions:

  1. Preheat oven to 350 degrees.
  2. Spray foil cupcake liners with olive oil.
  3. Combine baking soda and water in a mixing bowl.
  4. Divide mixture into 6 muffin cups.
  5. Liberally sprinkle with essential oils and gently blend with a fork.
  6. Bake for 20 minutes.
  7. Carefully remove from muffin tin, while still warm.
  8. After cooling completely, add a few more drops of essential oil to each.
  9. Storage in airtight container.
  10. To used, place on shower floor just before getting into the shower.
  11. Enjoy.

I put this concoction onto my winter veggies before I put them in the oven last night:

MIX THE FOLLOWING INGREDIENTS TOGETHER:

1/2 cup olive oil

2 tsp very finely chopped fresh cilantro

2 cloves finely chopped fresh garlic

1 TB coarsely choped fresh rosemary

1/4 tsp dried red pepper flakes

You can still add salt to your veggies if you want to before you roast them, but if you want your veggies to be unsalted, then just don’t add any before they go into the oven.
