Cheesy Chicken Mexican Bake

At my house, we love Mexican food but I always feel like I eat to many carbohydrates whenever we have Mexican. Between the chips, tortillas and rice it is sometimes too much. This recipe is a result of my love of the Mexican flavors and trying to reduce the amount of carbs. This dish is so simple and I think it is very tasty and satisfying.

INGREDIENTS

  • 1 TBSP olive oil
  • 2 red or green bell peppers, chopped
  • ½ onion, diced (I like the sweet onions)
  • 3 cups cooked shredded chicken (I often used a rotisserie chicken from the market)
  • 4 oz can diced green chiles
  • ½ cup salsa verde
  • 3 cups of shredded cheese (sharp cheddar or Monterey jack or a combination)
  • salt and pepper
  • spray olive oil

DIRECTIONS

  1. Pre-heat oven to 375 degrees. Lightly spray an 11 x 7 baking pan with spray olive oil and set aside.
  2. In a large sauté pan, over medium heat add olive oil, bell peppers and onion. Sauté for about 10 minutes.
  3. In a mixing bowl, combine peppers, onion, chicken, chiles, salsa, and 2 cups of cheese. Add salt and pepper to taste. (Usually I don’t add much if any salt because I think the salsa has enough.)
  4. Pour mixture into baking pan and top with the remaining cup of cheese.
  5. Bake for 15 to 20 minutes, until cheese is melted and the dish is heated.
  6. Remove from oven and let sit for 5 minutes before serving.
  7. Enjoy
  • I usually serve with a large dollop of fat-free Greek yogurt (instead of sour cream).

 Hi, Everyone!  Happy What I Ate Wednesday! Wednesday sure rolls around quickly.We have a new theme for September and I could not be more excited. The new theme is “Fall into good habits”, which is about making a few goals for the fall into long-term good habits. For me this is the perfect time of year for new goals, returning to school I always look for ways to improve.

My three fall goals are: 1) Return to Sunday marketing and cooking for the week. 2) Continue with my workout plan, trying to improve each week. 3) Stay organized and ahead of the game with all school work.

This is what I ate:

Breakfast (6:30am)

I started the day with a coffee (blurry as always 🙂 ) and NuGo bar and a apple. I used a recycled picture here, after my coffee I guess I forgot to take any pictures. I do have class early in the morning and I always feel rushed.

 

Am Snack (10:00am)

A few kiwis sliced and peeled.

Lunch (1:00pm)

I was lucky to have the time to grab some lunch at the Early Bird Cafe.  We started with homemade potato chips with an onion dip. that was so good. And a super tasty cobb salad.

Dinner (6:00 pm)

A simple homemade dinner of baked chicken, roasted brussel sprouts and steamed cauliflower.

Green2Go is a new farm to table café in Brea featuring local and organic ingredients. This café offers comfort food made healthy in a fresh and clean atmosphere. I like restaurants that are individual owned and that are trying to offer something different and this restaurant does just that.

 Menu

The very friendly and helpful staff at the counter take the orders. Green2Go offers indoor seating and outdoor seating in a courtyard with a fountain.

The menu is well-rounded, featuring salads, sandwiches, panini, burgers, rice bowls, tacos and desserts.

 Roasted Jidori Chicken Salad

My favorite dish is the Roasted Jidori Chicken Salad because it tastes fresh and homemade. This salad has organic granny smith apples, roasted sesame seeds, slaw, radish, lemon juice, Dijon, mayo and avocado. I love that all the salads are available in two sizes: healthy and full size.

 Seared Ahi Salad

Another favorite is the Seared Ahi Salad that features rare ahi, Asian slaw, greens, and organic granny smith apples with vinaigrette.

Angus Beef Burger with Lettuce Wrap 

In addition, I have enjoyed the Angus beef and turkey burgers both were juicy and flavorful. I like that they offer the choice of a whole-wheat bun or a lettuce wrap.

 Cookies

I can’t leave Green2Go without some dessert. I like their old-fashioned banana bread that is available by the slice or loaf. Also, I have sampled several different cookies and they have all been good.

Hi, Everyone!  ” Happy “What I Ate Wednesday!”  These are my meals from last Sunday. This was a busy day, I attended a picnic and a concert. Hope you enjoy my day. Thank you to Jenn at Peas and Crayons for hosting the WIAW!

This month’s theme is summer staples and on this day I attended a picnic, barbecued at home and attended a concert, all summer staples for me.
 

This is what I ate:

Breakfast (6:30am)

I started the day with a coffee and smoothie made with chia, coconut milk, almond butter, flax seeds, frozen bananas, cinnamon and nutmeg.

Lunch (12:00am)

I attended a company picnic at Whittier Narrow Recreational Area for family and friends.  I forgot to take a picture of my plate, so the plate below belonged to someone else. I had carne asada, bean dip, veggies and chips. Everything was tasty and it was a fun event.

My husband grilled some chicken for the week and I had a piece. It was good as always, I am lucky he is such a good cook. 🙂  This evening I attended a concert at the House of Blues in Anaheim with a few friends. We saw The Wiseguys, they played old big band music. I had never seen them before and they were really good. It was a fun night!

Chocolate Chip Cream Pie

Ingredients

Crust

  • Cooking spray
  • 5 TBSP unsalted butter, melted
  • 1 package of chocolate wafers (Nabisco or similar)

Filling

  •  4-cups of mini marshmallows
  • ½ cup whole milk
  • 1-cup heavy cream
  • 1-cup semi sweet chocolate chips (roughly chopped)

Directions

Crust

  1. Pre-heat oven to 350 degrees
  2. In Ziploc bag, place chocolate wafers, crush cookies until they are a powder consistency. I used a meat tenderizer on the flat side.
  3. In a bowl, combine wafer powder and melted butter.
  4. Spray pie tin with cooking spray and pour wafer mixture into pie tin. Press mixture into the sides and bottom of tin to form the crust.
  5. Bake crust for 10 minutes.
  6. Remove from oven and let cool.

 Filling

  1. In a double boiler over medium heat, add marshmallows and milk. Melt marshmallows and combine with milk.
  2. Remove from heat and let cool completely.
  3. With a mixer, whip cream until it forms peaks.
  4. Gently fold in cooled marshmallow mixture into the whipped cream.
  5. Gently fold in chocolate.
  6. Pour mixture into cooled piecrust.
  7. Refrigerate for 3 or more hours.
  8. Serve and enjoy.

 Hi, Everyone!  ” Happy “What I Ate Wednesday!”  These are my meals from last Wednesday. This day we attended the last outdoor concert of the summer season in our town. We have attended most of them and we enjoy being outside and picnicking. Tanner, our dog, loves the concert more than we do and I am sad the season is over for him. 🙁  Hope you enjoy my day. Thank you to Jenn at Peas and Crayons for hosting the WIAW!

This month’s theme is summer staples and this day does feature some my summer staples. Blueberries, salads (all kinds), water  and summer concerts are some of my summer staples.

This is what I ate:

Breakfast (6:30am)

I started the day with a coffee and two poached eggs with some melted cheese, green salsa and fresh ground pepper.

Am Snack (10:00am)

Ricotta cheese, blueberries, slivered almonds and a sprinkle of cinnamon. Yummy 🙂

Lunch (11:30am)

Salad with brisket (leftover from the night before), butter lettuce, spinach, red bell pepper, tomato (home-grown), feta cheese and Italian dressing.

Dinner (5:30 pm)

I didn’t have time to pack a picnic, so we picked up dinner from Healthy Junk. I had a vegan Philly Cheese Steak with sparkling water.
