Welcome everyone! Happy “What I Ate Wednesday”! This month’s theme is “Sensible Snacking.” I always try to have sensible snacks and most of the time I succeed but not always. Hope everyone is having a good week so far. Thank you to Jenn at Peas and Crayons for hosting the WIAW!
This is what I ate:
Breakfast (7:00am)My usual coffee with hazelnut milk and stevia in my Diamond Jubilee mug for the occasion.
Cottage cheese with pineapple chunks.
AM Snack (9:30am)Oven roasted cauliflower.
Lunch (11:45am)Tofu bowl with black beans and brown rice from Wahoo’s. Someday I want to recreate this at home, the tofu is marinated in a Polynesian sauce and I really like it.
PM Snack (2:15pm)My first really tasty peach of the year.
A simple kale salad.
Thank you for stopping by. I hope your day was full of healthy meals.

Oh, I have to make cottage cheese with pineapple chunks. It looks so good and much better than the prepackaged kind.
Thank you. it has tasted really good to me lately.
Love cottage cheese with pineapple! Love your Jubilee cup. Found it on line but I didn’t want to pay that much for it. I want to get one for my sister.
Me too! Thanks Fran.
I have been loving cottage cheese lately! I buy low sodium and put hot sauce and pepper on it- sounds interesting I know but it is delicious!
Me too. I think I have not had cottage cheese for a year or two, but now I am loving also. My husband’s favorite way to eat cottage cheese is with tabasco sauce.
I saw some awesome looking peaches at Trader Joe’s yesterday but sadly passed them up. Your post is making me wish I would have grabbed a few!
Thank you! We have been so lucky this year, most of the summer fruit we have tried has been so good.
Oooh! That cauliflower looks so awesome! It’s a rainy day here … seems like the perfect day to roast some veggies
Thank you. Enjoy your roasted veggies.
Hazelnut milk sounds so good! I’ll have to look into that!
I love hazelnut milk. I always keep it on hand and sometimes I make my own.
Fresh peaches scream summer, I cannot wait until our local peaches are available. Your meals look so healthy!!
Thank you. I am always trying.
I love this time of year when peaches are in season…I love the white ones, how about you?
I love the white peaches too. I have not seen any that have looked good yet. All the great summer fruit makes snacking easy.
