Hello Everyone! Happy WIAW and 4th of July. Hope you all have a wonderful holiday. Thank you to Jenn at Peas and Crayons for hosting the WIAW.
This is what I ate:
Breakfast (6:15am)An earlier start so I could get off to a morning study session, started with my usual coffee with hazelnut milk and stevia. Also, 2 poached eggs with fresh ground pepper and my favorite tarragon shallot citrus seasoning from Savory Spice shop. And a few assorted vitamins.
AM Snack (9:00am)
Fresh strawberries and kiwi.
Lunch (11:45am)
The urban plate with tempeh, caramelized onions, and portobello mushroom stack and a kale salad at the Veggie Grill.
PM Snack (2:45pm)Leftover homemade kale stir-fry.
Dinner (5:30pm)A salad with grilled chicken, greens, roasted mushrooms, sundried tomatoes and goat cheese at Bruxie. This restaurant is a waffle sandwich place and the sandwiches are good but to heavy for me for dinner.
Dessert (7:30pm)We picked up a nutella cupcake from Merely Sweet to share at home with my husband.
Thank you for stopping by! I hope your day was full of healthy meals.

Oh my gosh…The Veggie Grill is seriously my obsession. I seem to find myself there at least once a week (which has become quite expensive!) But, I can’t help it!
I actually haven’t tried the new Urban Plate- it looks and sounds delicious though! The All Hail Kale with blackened tempeh is my all-time favorite dish. With sweet-heart fries, of course!
Love your blog, by the way. (:

I know. Me too! I will have to try your favorite. 🙂 I also love the sweetheart fries. Have you ever had the side green salad? It is really simple but I like it with the chipotle ranch dressing.

Hahaha…I love that you’ve added a picture of your vitamins!! Your dinner salad looks scrumptious. And that cupcake looks very pretty too. What did you add to the kale stir fry?
Jennifer Student said:
Thank you. The kale has ginger and lemon here is the recipe. 🙂

Thank you. I think it is egg poacher I use, it was a wedding gift. It is one of those heavy duty ones from williams sonoma, sort of like this one.

Jennifer Student said:
Thanks. Sorry it has taken me so long to reply. I am constantly changing my vitamins, I had to grab the bottles an bring them to the computer with me. I am taking: Evening Primrose, Omega-3, L-Carnitine, B-12, CO Enzyme Q10, and a Cal, Mag, + Vit D. 🙂

wow I’m impressed with your poached eggs. Anytime I attempt to make them it turns out to be a complete disaster. I’m usually not a mess in the kitchen, but those poached eggs get me lol
That cupcake looooks like heaven. I am totally wanting one right now. hmmm may have to treat myself lol

I keep my vitamins in a little bowl like that too!
that lunch. I’m about to grab through my screen at it. The mushroom almost looks like a sand castle, but it’s simple succulent looking!

Ooo… What is on that portobello mushroom stack from The Urban Grill? It looks simply divine.

Thank you. It was very good, I am trying to work around their menu. Otherwise, I would end up ordering the same thing every time. 🙂
