Hello Everyone. Happy What I Ate Wednesday! I am sharing my meals from Monday. This week I am getting ready to return to school and I am trying to eat healthy since am still a little sick for the third week. Thank you to Jenn at Peas and Crayons for hosting the WIAW.
This is what I ate:
Breakfast (6:30am)
I started the day with coffee from Starbucks and a banana.
AM Snacks (9:30am)
Roasted brussels sprouts.
Lunch (11:30am)
Asian peanut slaw salad and fried wonton with a apricot sauce a t Jin Jin Asian Diner in Tustin.
PM Snacks (all afternoon)
I still have a cough that just will not go away, so I was drinking plenty of my Ginger Honey Lemon Tea (Recipe Here).
Dinner (6:00pm)
We are having a bit of a heat wave, so we decided to pull out the grill and take advantage of the warm weather. Grilled chicken with brocoli and avocado.
And a picture of my sweetheart Tanner on his new bed. 🙂

So do you really like avocado? We have two on our counter and I have been trying to convince my dad to try one. Any simple, clean-eating suggestions for how to serve it? Have you ever tried it in soup or making a mayonnaise with it?

I love avocados but I did grow up eating them since I live in California. That being said, I only like the Hass avocado and one other the Reed avocado but it is only available at my farms market for a short period of time. I have had avocados I have not liked, so if you have a bad experience don’t let that stop you from trying again. I have used them as a garnish for spicy soup, chili, stew, salad, with eggs and I even like just a plain sandwich made with avocado, mayo and some seasoning. Also my husband make the best guacamole I have ever had too. 🙂

I LOVE that ate roasted brussels sprouts at 9:30 am. I thought I was the only one who did weird stuff like that. God I love the blogging community!

It’s so funny how you’re dealing with a heat wave whilst Europe’s trying to cope with snow flurries. I’d totally be up for a BBQ right now 😉 Hope you feel better soon!!! Happy WIAW!

Your right, it is funny. We have had the strange winter either hotter or cooler than normal. It was a treat to Have BBQ. Thanks, I hope to be better soon. 🙂
