Broccoli Soup

I found this recipe at my mom’s house at Thanksgiving. We love this simple recipe so much, I make almost once a week. It is a great way to get more vegetables in your diet.

Adapted from Melissa McCarthy’s recipe

Ingredients:

  • 2 bags of frozen broccoli
  • 1 bag frozen soycotash (Trader Joe’s edemame succotash)
  • 2 quarts chicken broth
  • few sprinkles garlic powder
  • salt and pepper to taste

Instructions:

  1.  In large stockpot , over medium high heat, add broccoli, soycotash and chicken broth.
  2.  Season with garlic powder, salt and pepper.
  3. Bring to a boil, then reduce heat and simmer for about 15 minutes with pot partially covered.
  4. Puree with an immersion blender until slightly chunky.
  5.  Serve and enjoy.

* Regular frozen succotash or frozen green beans will also work, instead of the soycotash.

Hello Everyone. Happy What I Ate Wednesday!  I am sharing my meals from Monday. I have a cold, so I am eating comfort food.  Thank you to Jenn at Peas and Crayons for hosting the WIAW.

This is what I ate:

Breakfast (6:30am)

I started the day with coffee and Noosa strawberry yogurt, Uncle Sam cereal and slivered almonds.

AM Snacks (10:30am)

A couple of kiwis, since they have more vitamin C than oranges. 🙂

Lunch (11:45am)

A very tasty bowl of chicken soup, make by my good friend Jennifer (the RD). 🙂 And a open-faced grilled cheese with avocado. (Chicken Soup Recipe Here)

Dinner (5:30pm)

Homemade broccoli soup (recipe here) and a roast beef sandwich with cheese and tomato.

Dessert (6:30pm)

Homemade Nutella Hot Chocolate with whipped cream. So yummy!!! When you are sick you need to treat yourself. 🙂 (I will be posting this recipe later in the month)

What is Your New Year’s Resolution?

I was very set on not committing to any resolutions this year.  I never do.  However, a friend of mine came over for a visit and gave me a very convincing speech.  Basically, we all have room for improvement.  Despite it being the first of the year or half way through, we should always be looking for ways to improve.  How could I argue with that?  Last year, although I did not call it a New Year’s resolution, I did try to vary my exercise routine a bit.  It has been so fun joining Jennifer and friends on the trail on Sundays since we also get to take our dogs!  Above is a picture of my friends Christina, Carol, and I after a very muddy 5K run.

As for this year, my resolution is to get more sleep. I always tell people that I just can’t get myself organized enough to get to bed early.  The truth is, I just don’t make it a priority.  So, let’s see how I do!  🙂

What are your New Year’s resolutions?  Would anyone else like to commit to something?

Homemade Shower Bombs for a Cold

I have been feeling a little under the weather lately and two remedies have helped me feel better. I have been drinking plenty of my Ginger Asian Pear Tea (recipe) and Homemade Shower Bombs made with Essential Oils.

Essential oils gently help with nasal congestion. So many different oils are helpful for a cold. I used lavender and eucalyptus because that is what I had on hand and it smelled great. Other opinions would be sandalwood, cedar wood, peppermint, rosemary, thyme, frankincense, hyssop, tea tree, lemon and pine. With so many choices, you can make up your own custom scent.

Ingredients (for 6 shower bombs):

  • 1 cup baking soda
  • 1/3 cup water
  • essential oils of your choice
  • foil cupcake liners (paper sticks)
  • spray olive oil

Instructions:

  1. Preheat oven to 350 degrees.
  2. Spray foil cupcake liners with olive oil.
  3. Combine baking soda and water in a mixing bowl.
  4. Divide mixture into 6 muffin cups.
  5. Liberally sprinkle with essential oils and gently blend with a fork.
  6. Bake for 20 minutes.
  7. Carefully remove from muffin tin, while still warm.
  8. After cooling completely, add a few more drops of essential oil to each.
  9. Storage in airtight container.
  10. To used, place on shower floor just before getting into the shower.
  11. Enjoy.

Herbie Olive Oil for Roasted Vegetables

I put this concoction onto my winter veggies before I put them in the oven last night:

MIX THE FOLLOWING INGREDIENTS TOGETHER:

1/2 cup olive oil

2 tsp very finely chopped fresh cilantro

2 cloves finely chopped fresh garlic

1 TB coarsely choped fresh rosemary

1/4 tsp dried red pepper flakes

You can still add salt to your veggies if you want to before you roast them, but if you want your veggies to be unsalted, then just don’t add any before they go into the oven.

Happy 2013 and Happy What I Ate Wednesday!  I am sharing my meals from last Sunday. We have been having a cold snap, for southern California. We have been waking up to frozen grass, frost on the rooftops and I even had ice on my wind shield. I know if you live somewhere where it snows this is nothing but for us this is really something. 🙂  I hope you enjoy my day.  Thank you to Jenn at Peas and Crayons for hosting the WIAW.

Moroccan Cuisine…Give it a Try!

I have recently discovered Moroccan food and have found it to be quite exciting.  I was actually introduced to it by a nutrition student of mine, Kim, who did a cultural foods presentation on the cuisine. Morocco is located on the northwest coast of Africa and it borders the shores of the Atlantic and Mediterranean.  Its cuisine reflects Arab, Berber, Middle Eastern, Moorish, Iberian, Mediterranean, African, and Jewish influences.  I was especially impressed by all of the different spices found in the cuisine such as cumin, cinnamon, turmeric, ginger, paprika, anise seed, pepper, coriander, sesame seeds, saffron, and mint. If you want to try something new and exciting, give it a try!

Marshmallow Fluff

Marshmallow has always been a favorite off mine. I like it with hot chocolate and chocolate ice cream. Back in high school, I remember many trip to the market with my sister looking for marshmallow fluff and ice cream. I wish I knew back then how simple it is to make and that homemade tastes so much better. This is an old recipe I found in my mom’s recipe box. Since I found it, I have been making it about once a month and now my husband shares in my love of marshmallow fluff. Continue reading »
