Hi, everyone! Happy “What I Ate Wednesday”. This week the temperature has really risen in southern California. The heat has reduced my appetite; I am drinking lots of water and eating more salads, which is a good thing. These are my meals from last Monday. Hope you enjoy my day. Thank you to Jenn at Peas and Crayons for hosting the WIAW!
This is what I ate:
All Day
Water with lemon, I could not get enough.
Breakfast (6:30am)
I started my day with coffee with stevia and coconut milk in my London mug in honor of the Olymipics and a NuGo bar and an apple.
AM Snack (9:30)
Raw walnuts.
Lunch (1:00pm)
Vegan Fish Tacos from Healthy Junk were very good.
PM Snack (3:00pm)
We had a belated birthday celebration for my school friend Judy. Featured a homemade chocolate chip pie, that disappeared quickly. Recipe here.
Dinner (6:30pm)
Ahi poke salad at Green2Go in Brea.

Your dinner salad looks very refreshing. I drink LOTS of water throughout the year, even in the cold of winter, but I notice a significant increase in water consumption when it’s hot…. I wish I could come to California, it seems like such a beautiful place. Happy WIAW!!!

The warm weather in LA has messed with my appetite quite a bit too. All I’m craving is fruit, smoothies, and salads. Oh well- I suppose that’s not a bad thing!

Your eats look amazing! I’m learning about stevia after I bought a bunch of xylitol and then learnt that it might not be the best option for me. I’m interested that so many people use it! Keep up the awesome work, and happy WIAW!

I just made fish tacos for the kids I babysit. Except that they had not tortillas… And they asked, “Why don’t you just make some!” Haha.
So I did. 1 cup flour, 1/4 tsp salt, 1 tbsp oil, 6 tbsp water. Combine and then knead on a floured surface. Roll out into two circles and cook each side in a pan for one minute. Fill with baked fish, cream cheese or tartar sauce. BAM. Fish tacos. The kiddos were happy!
